Summary:
Today, we went over mostly on the properties of water. How its polar hydrogen bonding makes everything in life happen.
- The hydrophobic interactions of lipid in water, and why they aggregate in water (net decrease in entropy)
- Heat vaporization of water (he didn’t really go over this, but it’s because of hydrogen bonding)
- Functional groups with hydrogen bonding interactions
- Tonicity (isotonic, hypo, hyper)
- Why protein fold, and why there are water molecules associated with proteins? Even after crystalization, we see water on the surface (because it associates in the same place due to polar amino acids needing to associate with something)
- Acid and bases with titration curves and etc.
